• Roasted Squash

Another special nod to fall Farmer's Markets; with squash. Bring on the butternut, acorn and pumpkin. This recipe is super easy, mostly healthy, and can be done with almost any squash you like. This can even be done with sweet potatoes. If you are rushed for time or don’t want the hassle of peeling, washing, and chopping the squash you can buy it at the store already done for you. You might pay a little more but then we have to talk about how much is our time worth.

Cut the squash into bit size pieces. Drizzle the Cranberry Balsamic and Blood Orange Olive Oil on the squash and toss. Don't be afraid to get your hands dirty, toss until all the pieces are covered with the mixture.

Cover your cookie sheet with aluminum foil and spray with a non-stick spray. Place the squash on the cookie sheet and bake at 375 degrees for about 45 minutes. Enjoy.

Recipe Ingredient List

  • Squash - any kind you like, even sweet potatoes
  • 1/4 cup Cranberry Balsamic Vinegar
  • 1/4 cup Blood Orange Olive Oil

 *Note - you can use any flavor balsamic for this recipe.
