Cilantro Lime Rice

1 1/2 cup rice, any variety

1 cup of water

2 cups Low Sodium Chicken Stock

2 Tbsp of Persian Lime Olive Oil

2 Tsp of Himalayan Sea Salt

2 Tbsps chopped fresh cilantro, if using dried cilantro you will need more

¼ cup chopped dehydrated onions

1 Tbsp Garlic powder

Warm up pan with rice and half of the olive oil and mix thoroughly.  Add water and chicken stock with fire on high.  Mix well. Add all other ingredients, mix, and bring to a bring to a boil.  Cover and lower fire. Simmer for recommended amount of time on the container; usually 12-15 mins for white rice and 45 mins Persian Lime Olive Oil for brown rice.

Garnish with a little more Persian Lime Olive Oil and chopped cilantro

Add frozen corn for additional goodness, I love the frozen roasted corn from Trader Joe’s
